Dessert Of The Summer

Chances are you've seen this easy little dessert floating around, I had taken a screen shot of the recipe maybe a year ago and just came across it - it quickly became a dessert idea for this week and oh is it good!


So simple, you'll need dates, butter, olive oil, flaky sea salt and vanilla ice cream.

Turns out vanilla ice cream, olive oil and sea salt are a match made in heaven, AND THEN you add caramelized dates - I mean seriously!



Heat a little butter in a pan, take the seed out of the dates - I did one date per person sliced into 4 pieces each. It was a good amount for a smaller serving. Let the dates caramelize in the butter for a few minutes until they're a little sticky and warm. Scoop your ice cream, add dates, a drizzle of olive oil and top with flaky salt. Enjoy!
