I’m already falling behind! Ha ha.. ahh meal planning and grocery shopping are clearly not my favorites! I’m off on a field trip with Lauren tomorrow morning so my big shop is going to have to wait until Thursday.. here’s what were eating so far this week-

Monday // Seared Asian beef from Jamie Olivers 15 minute meals
I LOVE this meal. I love any of his meals that you pile together on a wooden board! It’s such a fun eat and the sauce on this one is to die for. I always end up with left overs and it’s great the next day for lunch! Check out all the Jamie Oliver cookbooks here.
Tuesday // I’m in the process right now of making a version of this Taco Bake. I’m trying this recipe for the first time tonight but it seems pretty no fail to me! ( and a super easy meal to pull together that the kids will love! ) I’m going to add my layer of chips towards the top so they don’t go mushy and I’m also going to serve them with more tortillas to scoop!
Wednesday // because I’m gone all day I’m going to throw a roast in the slow cooker for Beef Dips. I do a really simple version and it’s so yummy! In the slow cooker I’ll add water, beef broth and soya sauce to fill about 1/3 of the way up the roast. Let it slow cook all day and when you’re ready to eat get out some baguettes and with the sauce that is in the slowcooker, add it in a sauce pan with a bit more beef broth and soya sauce. MMM! I’m thinking a salad on the side because lets be honest we all stuff ourselves with the sandwich!
Thursday // French Onion Soup // I’m such a fan of this soup and love that a bowl of soup can fill you up. I may be a touch excessive with croutons and cheese, but they’re my favorite! Looking forward to trying this new recipe!
Friday // Smoked Salmon BLT’s with herbed mayo from Seriously Delish. Side dish of corn and bean salad ( The Chef Next Door ) and a leafy salad with Maple Balsamic Vinaigrette // 2 tbsp balsamic vinegar, 1 tbsp maple syrup, 1 garlic clove minced, 1/4 tsp salt, 1/4 tsp pepper, 1/3 cup olive oil
