I made Curtis Stone’s fish tacos this week for the second time.. I am completely obsessed with tacos’s after finding Udi’s gluten free corn tortillas, a few minutes heated in a pan on the stove and these are beyond delicious.. I mean better than regular tortillas, promise! So these fish tortillas are, well, insane. So good. So easy to make and so good. In his recipe he grills them on the BBQ, I just threw the fish in a cast iron pan on the stove because it was snowing ( ugh really! ). They turned out perfect that way too :) Add cabbage, some sour cream ( lactose free for me! ) and some yummy fresh pico de gallo and you’re done! In this recipe online it includes avocados which it doesn’t in the cook book, so even better and I used red onion and a green jalapeno because it’s what I had on hand and its yummy too! Then I thought I’d go out on a limb ( a very far reaching limb for me ) and try Giada’s chia seed pudding. I was seriously hesitant but oh thank heavens I did it.. this is DELICIOUS! Topped with strawberries, toasted almonds and maple syrup, it’s so good! Here’s the recipe.
Then last night I thought I would try Gwyneth’s white bean soup ( done as the french onion soup style option2 ) and arugula salad with smoked mozzarella & slow roasted tomato crostini. First let me say when it came to the salad I did not roast tomatoes for 3-5 hours. I bet they are divine if you do, but I roasted them for about 30 minutes with olive oil and salt and on the crostini ( Udi’s g free baguette ) with soy mozza ( gotta keep it dairy free! ) and they tasted amazing! The soup honestly was heaven if you like french onion soup, I used only one can of beans where the recipe calls for two and I used organic vegetable broth :) Thanks to two other bloggers who posted the recipes and make it terribly convenient for me to link them for you!
