In January when we went out to LA for a quick 3 day trip we stayed in Hermosa Beach ( at The Beach House, amazing! ) and one morning had breakkie at the local Martha’s and as a gfree/ dairy free eater it gets a little boring to eat the same ol’ eggs and bacon every day.. on the menu was a chicken rice + avocado soup. Hello! Sign me up! You better believe I ordered it.. and it was heaven. As soon as we got home I needed to recreate it so here’s what I found + my edits to make it mine! Photo below is the original soup from Martha’s.
I found this chicken + avocado soup recipe via Mama Miss.. and while it looks amazing on it’s own, I changed it up a bit to get that Martha’s flavor going on..
Here’s what I do..
cook 2 servings of rice in one pot..
boil a couple chicken breasts in another.. when cooked take out and shred.
In a large pot cook garlic, green onions and tomatoes. I season really well with salt and pepper at this point. Once softened add a couple of cartons of chicken broth and let warm.
In bowls add a good scoop of rice and top with shredded chicken. Fill bowl with broth. On top add half an avocado cut up and a bunch of fresh cilantro. Give a little squeeze of fresh lemon juice + enjoy!
I love to make this for lunch and we’ll eat it all week!
